So, you thought you had the best breakfast casserole recipe, but wait until you try this one! This breakfast casserole is a traditional favorite, loaded with eggs and bursting with flavor. It's the ultimate breakfast treat that will leave you wanting more.

I adapted this recipe from my sister Jessica over at Pretty Providence. With a few tweaks, I made it even more amazing. The great thing about this recipe is its versatility. You can experiment with different cheeses like pepperjack or Swiss or even add some veggies like spinach or zucchini to make it your own.

How to Make an Easy Breakfast Casserole

Making this breakfast casserole is a breeze! With simple ingredients like eggs, sausage, bell peppers, onion, and cheese, you can create a creamy, light, and fluffy dish that will impress everyone at the table.

Start by combining the eggs, sour cream, milk, cheese, salt, and pepper in a large bowl. In a separate pan, cook the sausage until it's nicely browned, breaking it into small bits. Set it aside and then sauté the bell peppers and onions in the same pan. Add everything to the egg mixture and stir well. Pour the mixture into a 9x13" pan and bake for 35-50 minutes, or until the edges are set and the center is slightly jiggly. Don't worry, it will continue to cook and set up as it cools.

Make-Ahead and Freezing Options

One of the best things about this breakfast casserole is its convenience. You can make it ahead of time or even freeze it for later use.

To make it a day ahead, simply prepare everything as directed, but hold off on baking. Cover the casserole and store it in the refrigerator overnight. When you're ready, just pop it in the oven according to the recipe instructions, and you'll have a delicious breakfast ready in no time.

If you want to freeze the breakfast casserole, prepare the recipe and add it to your desired pan. Cover it well with plastic wrap and then tin foil, and freeze it for 2-3 months. To enjoy it later, allow it to thaw overnight in the refrigerator, and then let it come to room temperature before baking according to the recipe instructions.
