How to Make Pancakes from Scratch

Making pancakes from scratch may sound intimidating, but it's easier than you think. Follow these simple steps:

  1. Whisk together flour, baking powder, white sugar, and salt in a medium bowl. (Refer to the recipe card below for precise measurements).

  2. In another bowl, combine milk, eggs, oil, and vanilla.

  3. Make a well in the dry ingredients, then pour in the wet ones, whisking until smooth.

  4. Start heating your griddle (medium heat) and pour a scoop of batter onto it. Flip the pancake when it becomes slightly bubbled and golden brown underneath. Cook until golden brown.

  5. Serve and enjoy!

How to Make Fluffy Pancakes

For those who prefer extra-fluffy pancakes, here's a tip: let the batter sit for 5-10 minutes to allow the chemical reactions to take place. It's also beneficial to heat your griddle after making the batter, giving it time to rest.

Making Pancakes From Scratch Tips & Tricks

To ensure pancake perfection, consider these helpful tips:

  • Use a hot griddle. Not as scorching as some recipes suggest, as that can result in a burnt exterior and raw interior. Opt for a medium-high heat setting.

  • Invest in a wide spatula/flipper to effortlessly lift and turn your pancakes. Flippers work like a charm!

  • Pair your pancakes with my Homemade Brown Sugar Sauce for a divine treat (as shown in the photos).

  • If you prefer lighter and fluffier pancakes, use cake flour. However, keep in mind that the end product absorbs syrup more than all-purpose flour pancakes. Personally, I find the texture and taste to be superior, so I always keep a bag of cake flour on hand for pancake mornings.

  • Don't have cake flour? No worries! I'll share a quick recipe below!

How to Make Cake Flour

Creating your own cake flour is a breeze! Follow these steps:

  1. For every cup of all-purpose flour, remove 2 tbsp of flour and replace it with 2 tbsp of cornstarch. Whisk the mixture thoroughly.

  2. For example, scoop 4 cups of all-purpose flour into a bowl. Remove 8 tbsp (equivalent to 1/2 cup) of flour and add it back to the bag. Then, take 1/2 cup of cornstarch and incorporate it into the flour in the bowl. Whisk everything together.

  3. Voila! You have homemade cake flour!
